Throwable items (Snowball, Egg) textures are always the default texture until thrown.
Reproduction Steps:
Load a Minecraft world using a non-default texture pack. (I used Natural)
Get a throwable item.
Observe.

Can you please provide more details on the issue? By "textures" do you mean the inventory icons, or the actual object that the player character holds in their hand? Are the throwables only the correct texture after throwing, or are there other circumstances in which the textures display correctly?

This issue is still a thing, can confirm in 1.17.30. Bows, Crossbows, and all projectiles show as their default texture, but when you throw a projectile, their texture pack texture renders.
I have the same issue on my custom marketplace resource packs.
On iPad, pausing the game, minimizing and then reopening the app seems to fix the textures.
My texture pack is built for 1.16.100.
I have attached some images from Zombie Cart Pharaoh's Revenge which is on the Marketplace already(Before and after I minimized the game).
