I have a world which was created 5 months ago, the problem is that it is not updated to the nether update and when I create another world, the world that I created is updated to the 1.16 version.

You will need to explore new chunks in the old world to see the new biomes/structures. Any area you have explored will stay as is and won’t be changed to new biomes.
