my friends and I have been running a 5 person realm and our local mobs around the areas, golems, captured zombies, panda's, even named entities have been despawning at rapid rates, even happening so fast as me turning around to find them gone immediately.

In 1.16 monsters no longer acquire persistence from targeting you and they can despawn in the dark, so you will need to name-tag them to make them persist.
Name-tagged mobs disappearing is a different issue entirely. Random disappearance associated with saving or loading parts of the world is tracked at MCPE-21416. If you have actually seen name-tagged mobs disappear while playing that would be something else. Can you clarify exactly what you have observed?
