'Freezing' is what I call which means the game doesn't respond to any user input (the game didn't crash— but its not responding).
This issue has already been happening to me lately ever since I purchased Minecraft for the Switch.
In my experience, it happened:
Sometimes when the game is suspended in the Main Menu for a long time, and then joining a server/realm or opening a world;
Sometimes when getting disconnected from the joined friend's world;
Now, everytime I force close the game, my Switch itself freezes!
To be honest, I am not sure when it really happens. But when it does, I do not have a clue why it happened now– but not earlier. There's just a lot of 'unstable' things.
I usually have to restart my Switch, and then re-open the game to fix the issue.

The issue seems to happen only when I join/open a world or server/realm, and then force closing the game.

I've had the same problem. I play on switch lite but that shouldn't make a difference.

Don't even have to force close the game or leave it suspended for a long time... I can open the game, go into the home menu, click on any game including MC and it just freezes

At least for me it seems that the freezing happens only when I'm logged in with the Microsoft account. Seems to work pretty normally when not logged in. What happens after login to MS account:
Shows the "you've successfully signed in with MS account" or something similar
When clicked the "start playing" button, it just shows the background running, but no menu at all (can't do anything in game)
When clicked the Switch Home button, it goes to Switch main menu, but everything freezes (only option is to shut down the whole console with holding the power button)
After a fresh start, the game starts "normally" and you can play the game, but after "Save + Quit" the game it goes back to Minecraft main menu, the freezing issues starts again
It can freeze in multiple different situations, but the most common is when you try to close Minecraft with the "Close software" action

I play on switch lite. Whenever I close the game my switch freezes and I have to restart it. Quite annoying.
