While me and my friend are out collecting slime balls, a fair distance from our houses and villagers, we noticed an unusually large number of zombie villagers, the vast majority which had professions. Later, when we returned to check on what was previously a 'village' (a box containing several villagers with great trades where cats refuse to spawn), they where all gone except for one that was a zombie. There was no way the zombies could have spawned inside the villager box as it was fully lit and they couldn't have gotten in through the doorway as there where multiple fence-gates that we always keep shut and a door that was also closed. I understand that zombie sieges can occur in villages, regardless of the light level but the villager box was not classed as a village and anyway, how did our villagers find themselves all the way over to us, a good couple of hundred blocks away.

This does seem like the most likely reason. However, on this world, I have had several problems with teleportation of entities, item duplication (I somehow got 2 dragon eggs because the game crashed during an auto save) and stuff shapeshifting or becoming textureless. I should probably add that the small box (I’ll try and attach an image later) containing the villagers has a door sandwiched between 2 fence gates, all of which were closed when we returned and there where torches inside and around the box lighting up the surrounding area by about 20 blocks in every direction from the box.
We have also recently reached The End and Outer End (during the day the 1.16.20 update was released), spending a large amount of time there so maybe the spawning rules for certain mobs where corrupted or inadvertently adjusted by Mojang. I think this is more a problem with my console or the minecraft world rather than a mistake during an update.
Sorry if I am just unaware of some game mechanic.
This morning, when I go to check on the sub-basement of my house, there is a zombie at the door and my pet slime (with a nametag) is gone. Every single part of my house is full of light. This is definitely something to do with the old ‘cave zombies’ thing that has returned.
I'm not sure what you mean about cave zombies, but there are lighting update bugs that can allow mobs to spawn near light sources (MCPE-58182 and MCPE-69037), and mobs randomly disappearing is also a known issue (MCPE-21416).
For good measure, you may want to make sure your Switch OS is update and then check your Minecraft save data for corruption. You can do this through the Switch settings menus.

Most likely, some spot in the village was not lit enough or a zombie spawned outside and broke down a door to reach the villagers. Then the zombie spawned and converted your villagers while you were still within 50 blocks, and the villagers started following you without you realizing it.
In order to track something as a bug, we need steps to reproduce the issue. If there's something you can reproduce here, please add steps.
