I cured some zombie villagers in a Realm and tried to change their jobs but it didn't work. They would either never change/get a job or they would change after a long time. They would also sometimes change into a completely random profession even though they couldn't possibly do that since they were way too far from any other profession blocks.This worked earlier in the same update.

It sounds like you might be expecting villagers to link to the closest job site block that you place to them. Please provide provide more detail about the steps you are taking to try to assign professions, and clarify what you are expecting to happen when you take those steps.
I tried to get a recently cured villager to change its job with a workstation but it would take a really long time, it would change into a different profession or do nothing at all. This is happening in an area far from any village or home.
Were there any other workstations within 16 blocks of this villager, or any other villagers + workstations within 100 blocks?

@Evan: have you confirmed other realm members are also having a problem? Maybe the realm owner could provide a copy. These worlds could be experiencing MCPE-98361 but we would need more information to evaluate that.
