I have been experiencing this on the Nintendo Switch as well 1.16.201
The only thing that gets things working is:
1. Archive game 2. Redownload Game 3. Move game from SD card to internal storage
This will get it working for maybe 1-3 days before i have to do it again. I have 15GB of free storage space internally and 70GB on the SD card.
There is definitely some sort of temporary file issue with Minecraft on the Nintendo Switch in 1.16.xxx, as well as some sort of oddity with accessing (or writing) files simultaneously on both internal and external (SD card) storage.
