It sure is annoying. Using logarithmic volume sliders is a standard nowadays, and it would be really helpful to have those in Minecraft settings instead of what we have there now. Seems like an easy thing to implement, so why not?
Looks like reinstalling the game solves the problem. Now that I saw the festive chest textures, merry Christmas to all of you, Mojang and gamers!
I updated the game to 1.15.1 and got this issue too. Some textures (e.g. chests) are messed up.
