Thank you @forlornransomed ! I followed the directions they left and my menu graphics are working again.
I have the same problem with mine, the menu doesn't visually show up. I haven't tried creating new worlds or opening any pre-existing worlds. I tried uninstalling and re-installing the game, that didn't work. I tried deleting all imported textures (I downloaded them online, they weren't already in the game) and that didn't fix it either. I haven't been on MC Bedrock in a few weeks so I don't know how far back this bug goes in version histories.
I don't know if it's been patched or not, but I had two worlds crash in non-electrical related incidents and the same thing happened to me. Right now I have about three worlds with the seeds and the names reset. I'm also using Windows 10, by the way. One of the worlds seems to be doing partially better after unloading and reloading the chunks, but it doesn't seem to be fully fixed.
I'm having problems with this on windows 10 edition with doors and trapdoors. I'll close them and the texture will stay the same but I can't walk through them and the outline - the one that shows which block you can break - will show it as being closed. Not complaining, I just think it's strange. If I update the block by placing water next to it it returns to normal, but until then it stays the same.

If you get stuck on a blank red screen, follow the same steps as before (Menu = gone issue) but switch to different graphics settings if you can. (Low power to high quality) then reopen the game. It should display correctly. IDK if that helps, I thought I'd say something in case it would help.
