This problem is also happening to me. I've read through some of the comments, and it's all similar issues to my own.
My gamertag is displayed as "skinStandardCust" in the main menu, when I pause in a world, in chat when I type or get an achievement, and even no matter the skin I change my character to. When I go to the Minecraft settings and look at my account, it still says my normal gamertag (Azlynae), but it doesn't seem to be applied in any other form in-game. I've tried to update the launcher, the game itself, the Xbox app and it still hasn't seemed to work. In the Minecraft Launcher, on the right-hand side from where the green "Play" button is in the center, it says I'm logged in as my regular gamertag, but even if I log back in once I've loaded into the main screen of the game, it still appears as "skinStandardCust" with no resolve. This has been going on for a while now (a couple months) and I don't know how to fix the issue.
It isn't an important problem, I suppose, but it's rather annoying when it isn't what I expect to see (or would enjoy seeing, rather), and it seems to be happening to a lot of other people, as well. Thank you.
