While Jackson is correct regarding splash potions, I can confirm this bug occurs for potions consumed in a regular manner. Multiple times while using extended duration strength and fire resistance potions, the effects would end prematurely.
It is worth noting they usually ended suddenly with a duration between 1:00 and 2:30 remaining, though it seemed random exactly when they would stop working. What is interesting is that two potions consumed in quick succession would end one right after another, rather than one lasting 6:45 (for example) and the other lasting 6:20. This leads me to suspect there is either a bug in the timer shown on the inventory screen, or a bug in how the duration of a given effect is calculated based on some sort of variable cross-talk.
Next experiment will be consuming a potion, watching the timer on inventory screen, and also timing the effect with a stopwatch. Seems very likely the issue could just be in the timer displayed on the inventory screen.
