Ran into the same issue when fishing. Game entities would stop responding. Can move around, animations on carried items (pick, fishing pole, food, etc) would occur, but the interactions would do nothing. What's more is that if I close it the SP world it gets stuck on the "Saving World" screen and I have to kill the task. Optimizing world did not resolve. I can switch over to 1.16.5 and 21w03a and it works fine, so this problem is specific to 21w05a. [JE, Win10, 1.8.0_271]
EDIT: Also wanted to add that if I move to a new virgin chunk the JRTE crashes completely.
