I had something odd happen to me, too. I built a 1x1 tower in a field, and kept tping back to the top of it.

After around the 10th teleport, the tower was gone. In fact, everything I had built nearby was gone. Same field, same exact co-ordinates. It seems the chunks just regenerated fresh.

Leaves aren't water-loggable on Java Edition.

That being said, there is a bug with 21w10a where Lightning Rods cannot be waterlogged.
