I'm having the same issue. Running the game in a windowed view eliminates the issue. Seemed to me that GSYNC/FreeSync was the issue, but after disabling GSYNC and restarting the game nothing changed. Something else is going on.
I've noticed this issue multiple times on other versions as well.
Edit: After further examination, the issue was resolved for me when using the official Minecraft Launcher instead of Prism Launcher.
Edit 2: Issue was resolved on Prism Launcher as well by using the Mojang recommended Java distribution and version. Eclipse Adoptium apparently has some issues.
