I've seen in my logs that minecraft VR was trying to load from steamVR for some reason.
I've unstilled steamVR, done a windows update and rebooted, it got it working for me.
Let me know if this fixes it for anyone.
Below is where you can find the logs, and the log that I was seeing as the issue.
FYI, you will need to show hidden files to find the logs.
C:\Users(your user)\AppData\Local\Packages\Microsoft.MinecraftUWP_8wekyb3d8bbwe\AC\openvr\logs
