I have also experienced this issue multiple times on the Nintendo Switch version v1.21.30. Survival normal mode. Under global resources I have the Minecraft Texture Pack active.
I play on Nintendo Switch and noted this starting with the 1.10.0 update as well. I close the doors in a village and add doors to buildings that don't have them, villagers go in but don't close them. Then most of them die overnight even though I try hard to save them all.
I have the same issue with my Switch version of the game as well v1.8.1. The lag became very bad for me on a file that was over 107.3MB. However, other smaller files 37.6 MB and 27 MB have also experienced this. (Still had my large file saved on my Switch.)
I have experienced this as well, multiple times. I am using Nintendo Switch, Minecraft v1.8.1. This has happened in multiple seeds as well. I usually search for a seed on ChunkBase Biome finder. What has happened is I saved in a perfectly safe area, (I think the times it has happened it was in my base or a building in a village. When I log back in, a message informs me that I have died, the background will usually be my last saved spawn point or my original spawn point. I respawn and usually am not able to see any of my items. In a couple of cases I was able to return to my original spawn point and find the items I had dropped. Thank you for looking into this issue. It doesn't happen every time I save, so it may be hard to replicate. I saw a video by AntVenom talking about being able to fall through the bottom the world in the Switch version... I have wondered if this was part of the issue... but, just guessing. The last seed this happened in was 228938930 coordinates 711, 67, 703 approximately, I was in a village. I respawned on the roof a the building where I had my bed and last saved spawn point, but couldn't find my items.

I am also having issue with this from time to time. It is better than it was before the 1.10 update, but still happens.
Thank you! I will.
