Created an account just to let folks following thread know -
All I had to do was create the registry key noted above, and then launch Minecraft from inside Oculus Link. It appeared to crash (as it had before), but then after Minecraft for Windows 10 loaded onto my desktop, it re-appeared on the Oculus Quest 2.

For any tech savvy folks, you can troubleshoot by downloading 'WinDbg' off of the MSFT store and analyzing the *.dmp files located in C:\Users(username)\AppData\Local\CrashDumps\
It's possible that what ended up 'fixing' it for me was installing Vivecraft and launching that. It worked fine, but I still wanted the Windows 10 version to work, so I went back after installing Vivecraft and it strangely worked. Possible that there are some dependencies that are installed or configured when Vivecraft is launched.
