Can confirm happens in 1.18.0.20 beta on pc as well, seems to be more prevalent if the chest has a hopper attached.

I have the same issue as Joe, The boat despawns, not invisible. its happened when i have exited in open water to get loot from a sunken ship, its happened when i exited boat next to a grass block and i have had it happen when i left a boat in the water whist i slept next to it, i will see if i can replicate this in a new world
