I am also am experiencing the same problem... I added four pictures of my test world (snowy Biome) to show my issues... it seems to have something to do with using a texture pack, I use the faithful 32 pack on the first couple of pictures and on the second set I use the vanilla pack and you can see the difference... Not sure why this happens but I assume that it has something to do with the new models that mojang is cooking up
