I started having this issue after the 1.21 update, I left evidence of this above with my Minecraft version and my OS version in the file name itself.
Even though I have an iPhone 14 with the latest iOS version at the moment (iOS 16.2) storage not even 30% full and Minecraft 1.19.51 this bug is still present
The reason must be because the "Customize Controls" toggle is still marked as "(Experimental)" the only workaround is to disable that toggle which drastically improves the experience, although there's still few moments of unresponsiveness once upon a while.
