I, too, have the same problem as described. It occures for versions 1.7+, when switching back to 1.6.4 everything works again. I can also trigger the problem by "taking" a torch (putting it in the hand). Sometimes the blocks do not become transparent (as in the screenshots) but instead they turn black. To me it seems a little bit like the textures are not loaded properly anymore. When I play around with the graphics settings or choose another ressource pack, sometimes the textures are back until I take a torch again.
