I have this exact problem.
Found duplicate, need to rollback NVIDIA driver apparently.
Literally the same thing been happening to me. The game freezes, won't connect to internet, i try closing minecraft and my switch crashes so I have to power it off. Didnt have this issue til the 1.16.20 update
