Erin Crowe, I feel your pain. The lag was bad enough that if two players playing splitscreen try to place or break blocks at the same time it can cause major studdering. It was bad like this after the Aquatic update,mainly because I believe it was not fully optimized, and I believe it's the same here.
Atleast I know it's not just an Xbox One issue. This has happened before, after a big update,and it took awhile before they were able to optimize the game again. Hoping it doesn't take much longer.
