Workaround note:

I agree with one of the comments above so far. The trick is to ensure both local players are signed into the Xbox before launching Minecraft. If you've already loaded Minecraft, quitting it, and ensuring both players are signed into Xbox before reloading Minecraft seems to work as well. So far this seems to consistently load the same save point/inventory/level etc.

If you need to get your items back from "the other" save point, make sure the 2nd player isn't signed into the Xbox when player 1 launches Minecraft. Then add the 2nd player, including signing in, after the 1st player has loaded the world. You can then move your inventory into a chest.

This seems to work consistently and is repeatable in my testing thus far. We may have done it this way about 10 time now.

This issue went away for me for a while but started happening again. I am also seeing this in a world we just created this last week.  We basically have to quit and restart the game until the 2nd player's correct inventory loads. Behind the scenes, it seems like Minecraft is storing 2 different save points for the 2nd player, and the game chooses which one to load. This is extremely cumbersome and tedious to play with. Please, please fix.

UPDATE: I'm not longer 100% confident that these steps always work.  Another player in my home also theorized that the issue could be triggered by Player 1 Saving and Quitting while Player 2 is still in the game (which causes the game to end); versus player 2 quitting first, then player 1 - this sequence could predict the Minecraft character that would be loaded for player 2 in the next game. - but we haven't tested this scenario yet.

 

With regards to guest profiles, I don't know what that is. The profiles we log into on the xbox both have Microsoft accounts with username and passwords, if that helps.

 

I'll leave the info below but now I am less confident in the consistent reproducibility of this as there seems to be another variable, possibly the one I mentioned above.

I am able to reproduce this on an Xbox One for a 2nd player joining a Minecraft game on the same console (not online).

You need 2 profiles on the Xbox for this method to reproduce the issue of a 2nd player joining and having a different/unexpected Minecraft character appear. The gist is that it depends on what xbox profile was used to sign into the xbox when you turned it on, and if you changed your xbox profile while in Minecraft using the Y button on the Minecraft title screen.

In this scenario, there are 2 xbox user profiles, and the world with the issue exists in user profile #1.

  1. Turn the Xbox One console on and sign in using profile #1.

  2. Start Minecraft

  3. Open the Minecraft world.

  4. The appropriate Minecraft character will always load for the user that has the world.

  5. Have a 2nd player join the game on the same console (not online) using Xbox profile #2.

  6. When the 2nd player joins it will show one of two possible save points/characters for the 2nd player.

To get the other save point/character to load for player 2:

  1. Exit Minecraft and turn off the console.

  2. Turn the Xbox One console on and sign in using profile #2. <--- PROFILE #2, not #1 like before.

  3. Start Minecraft

  4. On the Minecraft title screen, press Y to change the player's profile to Profile #1 (which is where the world we need to load is).

  5. Open the same Minecraft world as before.

  6. The appropriate Minecraft character will always load for the user that has the world.

  7. Have a 2nd player join the game on the same console (not online) using Xbox profile #2.

  8. When the 2nd player joins it will show the other save point/character for the 2nd player. This will be different than the save point/character in the 1st scenario before... different inventory, different level, different last saved location, etc.

For me, there appear to be only 2 possible characters player #2... and the one that will be loaded seems to be determined based on if the initial player switched xbox profiles while on the Minecraft title screen.

 
 
 
 
 
 
 
 

To be clear, I only saw the reset inventory once, since then it seems to switch back and forth between a couple different profiles (inventories, etc). I just wanted to make sure that was clear since the duplicate items seem to just reference a reset profile.
