This issue becomes even more pronounced once migrated to a Microsoft account, since logging in is much slower through the MS SSO system which requires clicking through all the popups.

Pertaining specifically to chicken farms like the above - this comment from Frilioth suggests that it's hoppers that have changed, and that now they're not quick enough to get the drops before the lava destroys them. His farm uses a hopper minecart to get around this.

Is it possible that's the underlying issue here?
