This same issue occurred in our realm after the last update. logged in and there was floating trees, leaves, water column have even had complete regeneration of new biomes in already loaded chunks. My base is set up on an island and now where there used to be water is a whole new mountain about 60 block away. There is even instances of finding new ship wreaks with treasure maps that show land when opening the map for it only to be more ocean where the map shows outlined landmass. 

This is an issue on xbox too, not a single sign in our realm works. Exact same problem place it and write the words are there come back 5-10 mins later its blank or if you use glow ink it just disappears right away.
