I captured some video using the built-in app, but apparently due to the nature of the issue, the video recording cuts just as the issue occurs.
The above video is from before the window goes gray, and the window title disappears.
The below video is captured starting immediately after, when the window is gray, and without title.
Also attached the full launcher_log.txt file.
No other instances of the launcher could be found to be running after closing it.
