I might have found a solution to this unsure but i had the same problem so i wrote an email about it to Minecraft support and they told me this:
"I see that you're experiencing some trouble with your Minecraft game on PS, as the analog stick seems to be moving erratically. I can understand how frustrating this must be, but don't worry, we'll investigate this issue further.
In this case, we recommend that you first restore your licenses.
For PlayStation 5:
From your PlayStation home screen, go to Settings
Select Users and Accounts
Under Other, select Restore Licenses
Select Restore"
This surprisingly worked very well and haven't had any problems with it yet i even tried in different worlds and servers and still worked great even after closing the game and opening up again the only problem i encountered was that you now could see how precise the analog stick was so even if i moved it one millimeter in the inventory it quickly jumped over to another slot which is an easy fix if there were deadzone.
They also told me that:
"Should the issue persist, rebuilding the database can help alleviate issues with the game. This can be done through Safe Mode on your PlayStation. Please note that some Safe Mode options will result in the loss of data. Be sure to back up data to a USB drive or Cloud Storage before selecting these options.
1. Turn off your console by holding the power button for three seconds. The power indicator blinks for a few moments before turning off. 2. Once the console is off, press and hold the power button again. Release it after you hear the second beep — one beep sounds when you first press, and another seven seconds later. 3. Connect the controller with the USB cable and press the PS button on the controller."
