I registered to this so that I could comment that I am having the same issue. I have been playing since Beta but now I can't because of this "input lag". I am fine if I don't move but if I move one step using my mouse or keyboard ... forget it .. yet FPS seem stable enough. NO changes in video settings seem to help. I am going to try disabling vsync in MC vanilla now to see if that helps.
Okay turning off Vsync in the video settings in MC itself did not help me..
Also trying out the "Test Choppy" version trick did not help neither. I am not entirely sure the issue is the same as the OP but it ONLY happens in MC and never happened before 1.7.10 ..
