Created a new flat world on beta 1.16.200.52 on Windows. Created an 8x8 field of tilled dirt, put a water block in the center, put the composter in the center above the water block. Spawned a villager and gave it 64 potatoes.
It pretty quickly planted all the crops, when the crops were done growing the villager would travel around the field to pick them up and replant.
