I couldn't replicate this, I tried crafting it in my inventory, in a crafting table, and in the stone cutter, but only ever got polished andesite. But I do know the reverse is possible. Placing stone in a stone cutter allows you to get polished andesite.

I just did this and it worked exactly as you said. Putting stone in a stone cutter allows you to make all versions of andesite, granite, and diorite. Someone said this isn't a mistake, but the first thing to show up is andesite, not the versions of stone, which is probably connected to the inventory crafting space giving the wrong result.

Smelted stone and silk touched stone do not smelt. Smooth stone is completely uncraftable in survival, and therefore (unless you had smooth stone before the update) anything crafted with it are uncraftable.
