Can confirm in 1.19.2.
You most likely have your mouse sensitivity set high. This can be changed in the settings fairly easily.
Unfortunately, different versions have different options paths, but sensitivity should be the same across most versions if you are using the same installation.
To change your sensitivity in 1.19.2, open the pause menu and go to "Options/Controls/Mouse Settings" From there, there should be a sensitivity slider.
To change your sensitivity in 1.8.9, open the pause menu and go to "Options/Controls" From there, there should be a sensitivity slider at the top of the screen.
