Just encountered this same issue on a multiple player server i run, I cant enter my server anymore but likely any other play can.
in creative mode i clicked on an empty map to generate and instantly crashed server, was fine after a short moment for players to get back in except for my account.
My logs were the same but was a dark oak sign
This can be disproved by setting repeating command blocks with these two commands in an ocean biome and just wait. You will eventually get some stray zombie nautilus.
