I am seeing this too (it is especially noticeable with snapshot 13w04a). I have seen it in survival mode, and I did some creative mode experiments to reproduce it.
Steps: 1. Make a 5x7 pit, 3 deep, in the dirt. 2. Use the cow spawn egg to make 16 cows. 3. (this part seems to work best when flying) Switch to wheat, and right-click madly until no new hearts appear. Sometimes at this step, despite my best efforts, there is one last cow that has floating hearts. Perhaps this is related to the bug. 4. Kill all 16 adult cows. 5. Count & kill the calves. There are always at least 8, and sometimes there are up to 12 of them.
