I have all the same things you mentioned happening to me, we really need a fix, but i have hope the devs will make a fix soon 🙂

The new sand stairs, are doing that too.

This is also happening to me in creative mode, i cant place anything and save it, because when i load the game, the blocks I placed aren't there.
