Heres something about this I havn't seen anyone else mention : sometimes the mobs (or at least villagers) will go invisible before despawning. It will look like I have no villagers and that they all JUST despawned, but if I ring the bell all the doors will open and close, Aas if they are still there. They will only be invisible for like 2-3 minutes before they despawn, and a lot of the time they will just go straight to despawning.
