I guess that Minecraft won't detect whether there is a block above the Oak Sapling anymore but only a detection based on probability. So it won't prevent the Oak Sapling grow into a Large Oak Tree if any blocks exist above it, and if so, the Large Oak Tree will replace the block no matter what is it, even the Bedrock
