I am also having this issue on XBox One.   Multiple maps, multiple tries, over two days, resulting in no Me Gold! achievement.  Others have been slow up to two minutes), but this one simple doesn't unlock.    All maps I tried it on were generated in current release, both with and without "Experimental Gameplay" turned on.  

I'm in the same boat. Every time I load Minecraft, I have to set my skin again (reverts to Steve). My son does NOT have the problem on his XBox One, nor on his phone (Android).
