I just found the problem in a second chunk (inside my base, but not my main storage area which is why i may not have noticed it quickly). In my case, i created this world with 1.21.2 Pre3. It never upgraded. (I am not sure about this, i think its true, but the world is named after a snapshot, which i always do when creating non released version worlds). The problem didn't seem to start until after i created a portal to the nether and started traveling back and forth. I did experience a really long (10-15 seconds) save screen when quitting once.

The chests reappeared after sleeping, but they are still empty. I included the portal in case its location is relevant.
Can confirm this also happens in Single Player Java 1.21.2 Pre3 with the pale update turned on.

I noticed in the last couple of snapshots, but I figured it was known issues with snapshots. I couldn't find any other bugs like this so i opened this one.
After backing up and optimizing the world (i ticked the Erase Cached data too), the problem appears to have resolved. I will comment here if it reappears in the future.
Just updated to 20w22a and this is still an issue for Ocean Monuments (no guardians). Appears fixed for Nether Fortresses.
ok…so no edit if you accidently submit the bug before ready. That should be its own bug or at least put on a confirmation screen before having enter submit the bug.
