I'm having the issue in 1.16.1 on a Realm server (if that makes a difference). The one I built in my test world (single player) works fine.
While I understand Realms are busy - can replicate so posting here.
Hey - I found this one when searching for fixes: MC-193121
We updated our mod pack and now Zombified piglins drop all loot - hope that helps.
