This still occurs as of 1.16.4.

I'm experiencing this on a 2017 15 inch MacBook Pro, with a 3.1 GHz Intel Core i7 and a Radeon Pro 560 (4 GB VRAM). Mac in particular is likely to be hit hard due to weird 2x resolution scaling on retina displays, which Minecraft doesn't account for causing Minecraft to render at higher resolutions, which exasperates this bug.

Happens for me as well! Running Mac OS 10.14.6, with default Java settings. Occurs when optimising a world from 20w16a, haven't tested other snapshots. Really annoying as the game is super laggy due to the world format being changed, which is why I was trying to optimise my world!

have you already traded with the villager? if you trade with a villager, they will keep their profession if you break their workstation. this is the intended behavior according to mojang. additionally, are there any other workstations nearby they could be assigning themselves to?

Not a mod, but I looked at your post: "Description: Manually triggered debug crash". If you're using F3 + C to get your coordinates (or just pressing it for some other reason), holding it for 10 seconds causes an (intentional) crash according to the MC wiki. If not, you've found a very weird bug!
