The only way I got the problem fixed is by reinstalling the system... Now it is working.

...because we get 360 controllers and do not plan to buy Xbox One ones... Xbox 360 controllers work with any other games (even 2020 released ones) and are not officially discontinued in Minecraft. Anyway, issue still present here. Only Minecraft impacted.
Updated windows to 2004 and Minecraft to 1.16.1. Any gamepads still undetected by Minecraft.
FYI, I have de-installed and re-installed the game and it has just been updated to 1.16.0 version. However, the gamepad detection issue remains (and still working in any other game).

Please tell me if there is some process to apply or to test. For now, I have reinstalled the game and check controllers work with other games. I have also reinstalled gamepad drivers. But what's interesting is that the issue happens not only with XBOX360 controllers but also wired logitech one... The issue is present on any Windows user account. I guess there is a software conflict somewhere but nothing obvious in Windows device manager. It used to work... I am to try and uninstall some software randomly...

Thank you for the feedback, it"s appreciated! I tested your protocole however it did not permit gamepad in-game detection... I guess that something happened on my computer between the moment the issue happened and before, when all worked; but I am not able to identify a software that would have messed this up... When it used to work (weeks ago), I remember that if the mouse was just moved during the game, then it was not possible to switch back to the gamepad controller (it might be unrelated).
Anyway, I expect that something is not done in Minecraft gamepad support that is done in any other software.

I have uninstalled and reinstalled the game. The issue is persistant. My 3 gamepads (2 Xbox 360 wireless, 1 logitech precision) are NOT detected by Minecraft and only Minecraft (it works with any other games). I have tried uninstalled and reinstalled gamepads drivers (provided by Windows 10) without effect.
Please note that my game version is 1.14.3002.0. It seems Windows Store tries to update the game but it just continues downloading and installing the update without effect - it might be related or not.
Any idea how I could figure out where the issue comes from?

Just in case, I connected the logitech precision wired gamepad to an USB2 port - same issue. I am not so surprised as it seems the issue is more relevant to gamepad detection as a general matter (for my setup).

My Windows version has not changed (1909), only usual software maintenance updates (antivirus database, cumulative 1909 updates). Drivers have not been changed either (anyway, the gamepads do work with any other games and they are detected by gamepad debugging software).
The controllers are wireless (both are "affected"). I have tried and changed the wireless receiver but the "no detection" issue remains. I also tried with a wired gamepad (logitech precision) and the result is interesting – same issue: detected by any game except Minecraft. I went in Minecraft gamepad setup menu, but when I reallocate an existing gamepad key mapping by pressing a gamepad key, it is not detected (behavior consistent with "no detection")
I agree that something should have happened but I have not monitored the appearance of the issue on a day-by-day basis (Minecraft used by my children not by myself...).
One more thing that may be unrelated: it seems that latest Minecraft version is 1.14.60 but I am stuck at version 1.14.30. When in the process of updating through Windows Store, an update seems downloaded and an installation process runs but the version stays the same.
For the time being, I am running out of ideas... I would be prone to export my Worlds, uninstall and have a clean reinstall of the game...
@GoldenHelmet I do mean the operating system (Windows 10). I already had tried reinstalling both the controller and Minecraft but it did not fix the issue.
