I am experiencing the same issue on another iPad 5th generation, running iPadOS 16.7.16 and Minecraft 26.51 Hotfix.
The behavior is identical: Mojang loading screen, then a white screen, followed by an immediate crash back to the iPad Home Screen.
I have also restarted the iPad, offloaded and reinstalled Minecraft, completely deleted and clean-installed the app, tested before restoring any Minecraft worlds, and tested with Wi-Fi disabled and in Airplane Mode. The issue persists.
I also checked the iPadOS crash report. It shows EXC_CRASH / SIGABRT and Metal-related entries including MTLReportFailure and MTLValidateFeatureSupport.
