Issue resolved.

In my case, the problem was caused by Android Private DNS.

I changed Private DNS from a custom setting to Automatic, restarted my phone, launched Minecraft again, and all statistics and achievements started working normally.

This fixed:

Achievements not unlocking

Blocks Broken not updating

Distance Traveled not updating

Mobs Defeated not updating

Hopefully this helps anyone experiencing the same issue.
