It might only be due to the new cave gen, will test in the first 1.18 snapshot.

I was able to recreate this in 21w10a, with Feather Falling IV Netherite boots, Potion of the Turtle master with Res. 6, Enchanted apples, and hay bales.

EDIT: tried again without Feather Falling, lost 6.5 absorption hearts like you said.
