having the same issue with lag, XB One S. wheat caused major lag, sunset caused freezing/lag, collecting sugar cane even caused lag. i cant even play for more than 30 seconds without the entire game freezing up (i have 2 farms, animals in a pen and about 50 villagers where I'm at). first i thought it was my Xbox but other games run fine.
