I am having this issue also, playing the game (Switch edition) with all my good enchanted gear would result in the game freezing from up to 30's to 2min, during this time the audio of what I was doing can be heard (such as flying) but the game is completely frozen, after a period of time the game returns to running from that point as if nothing happened.
Stuttering and frame rate improve when I remove all enchanted amour and stored out of inventory, by only wearing an elytra and a few tools on hand I can manage to go longer periods without the game freezing, though still happens when I try things like trading on enter newly loaded chunks noticeably ocean areas.
Issues in single player, haven't played multiplayer.
