I have the same problem and i want to add that in my case when press click randomly on the center of the screen i hear the UI buttons getting clicked (from default sound effects ).Its like the UI is under the nether screen .... EDIT FOUND A FIX . So im re editing this so i can be more specific. Step 1 Open AMD radeon settings which you can find in your desktop by right clicking Step 2 Go in the tab "Gaming. Step 3 Pick minecraft or add it . Step 4 Put this settings i have in these screen shotshttps://prnt.sc/vyvp42https://prnt.sc/vyvpo5
This settings basically stops overiding minecraft and allows it to open up
