I’ve encountered this - it’s almost like sticky keys for me. I get stuck using chests, furnaces, cartography tables and then I realised whenever I’m holding something interactive like torches or bread (when my hunger is low) it uses it too. Mine’s definitely a sticky keys situation but I don’t have this problem in the latest release.
My controls were set to 'hold' initially and I thought that was the issue so I changed it to Toggle and the issue persisted.
