I can confirm that it keeps happening on java in version 1.21.4. I know it's not very useful, but for me, it seems that as the my server's world can't keep up (probably for a high entity quantity), some minecarts with hopper in certain areas (part of an storage, shulker unloaders etc) are disappearing. I have attached three screenshots of sections affected.
It happens with the lastest versions of minecraft too. The screenshots migrated from old bugtracker are from my server in java 1.21.4. The minecarts that dissapeared were static (some of them inside other blocks) and as it can be seens in the in the photos doesn’t follow chunk borders. So I don’t know if it’s really the same issue in all cases.
